What you need
Fresh beets: to achieve the pink hue, I will be using beets to naturally dye the eggs. In this recipe we only used two beets. You can also use beet powder.
Eggs: you will need a dozen eggs for this recipe, maybe find some local!
Step 1: BOIL YOUR EGGS & BEETS
You can make as many as you would like. Keep in mind you will be halving these eggs, 6 eggs equal 12 deviled eggs. A whole carton would be 24 deviled eggs.
Make sure your pot is deep enough and wide enough to handle the amount of eggs you plan on boiling. If too crowded your eggs will crack in the water.
You want your eggs to be slightly submerged in the water. Approximately 3 cups of water.
Bring your pot of water to a boil and carefully place your eggs in. I would recommend using a ladle or a tablespoon to place eggs in your boiling water.
Boil your eggs, to achieve a hard boiled egg let them boil for 10 minutes.
Once they have boiled for 10 minutes take them off heat and let cool.
Simultaneously, bring 2 cups of water to a boil. This pot will be for your beets.
Peel and cut your beets into fourths, the beets will dye your hands so I recommend wearing gloves for this process.
Once your water comes to a boil add your beets. You want to boil for 10 minutes. Remove your beets from the water and place your pot to the side.
Step 2: CUT AND DYE
At this point your eggs should be cooler – if you start this process while the eggs are hot, you will burn your hands…very unpleasant.
Peel your eggs – I have found peeling my eggs under running water has been the easiest. There are many tricks out there – use whatever one works best for you.
Slice your boiled eggs in halves, long ways. You will now scoop all the yolk out of the egg into a mixing bowl. You can use a teaspoon for this – you should be able to easily pop out the hard yolk, try not to break the egg white.
Add your peeled, sliced, eggs to the lukewarm beet dyed water. Let sit for 30 minutes to 1 hour.
Step 3: MAKE YOUR FILLING
In the mixing bowl add the hard yolk, finely chopped onion, mayonnaise, dijon mustard, apple cider vinegar, salt and pepper. Mash and stir with a fork, a fork allows you to mash the yolk and get your mixture fine. You want to fully incorporate your ingredients.
You can use a mixer for this process, but it is not necessary.
Step 4: PIPE YOUR YOLK
Add your mixture to a piping bag or you can use a ziplock bag and just cut the tip of the bag.
Pipe your yolk mixture into your pink dyed eggs. Make a swirl motion with the piping bag. You can also just use a teaspoon and fill that way!
Top your deviled eggs with paprika and enjoy.
You can also top with finely chopped chives, sprouts or additional finely chopped onions.

2 tablespoons mayonnaise
2 tablespoons dijon mustard
1 teaspoon apple cider vinegar
⅓ teaspoon salt
Pepper to taste
Paprika to taste
