Cauliflower Tuscan Gnocchi is a delightful dish that combines the comforting texture of traditional gnocchi with the subtle, earthy flavor of cauliflower. The creamy cauliflower puree not only enhances the gnocchi’s richness but also adds a nutritious twist, making the dish lighter without sacrificing taste. This velvety puree serves as a perfect base, allowing the gnocchi to soak up its lusciousness while complementing the vibrant Tuscan herbs and spices typically used in the sauce. What you will need for your Cauliflower Tuscan Gnocchi :
Cauliflower: The cauliflower is what is going to give this dish a creamy and delicious taste. This is a great alternative to add more vegetables into your meal.
Gnocchi: I found this locally made cauliflower gnocchi at my local market, you can make your own or you can buy your favorite brand at the store!
Step 1: BAKE YOUR CAULIFLOWER
Preheat oven to 350
In a large mixing bowl mix together your chopped cauliflower, minced garlic, olive oil, honey, red pepper flakes, pepper and kosher salt. Mix together until all the cauliflower is coated in your spices. Add your cauliflower onto a baking sheet and place into the oven for 30-45 minutes or until the cauliflower is tender to the touch with a fork.
Remove from the oven and place off to the side to cool
Step 2: CAULIFLOWER PUREE
In a medium saucepan add in your cauliflower, you will add in the vegetable broth, oregano, basil, salt and pepper to taste. Take an immersion blender and blend together your ingredients for 2-3 minutes. Make sure the cauliflower is completely pureed and there are no chunks. Sometimes adding to an actual counter blender works better for 3-4 minutes.
Step 3: GNOCCHI
Bring a pot of water to a boil and boil your gnocchi, you don’t want to fully cook your gnocchi,as you are going to be baking this dish in the oven. I would suggest this should only take 2 minutes – remove from the heat and strain your gnocchi.
Place in your gnocchi into your saucepan with your cauliflower puree. Mix well and ensure the gnocchi is well incorporated. You will now want to add in your arugula and mix well.
Step 4: DOUBLE BAKE YOUR CAULIFLOWER TUScAN GNOCCHI
Add your cauliflower tucson gnocchi to a baking pan and sprinkle some parmesan cheese on top and place back into the oven at 350 for another 20 minutes.
Step 5: ENJOY!
Remove from the oven and place to the side to cool for 10 minutes. Plate and enjoy your cauliflower tuscan gnocchi!
