This is the best side to any meal, these are so easy to make and are super delicious. I used colorful carrots in this recipe which really made this roasted carrot dish pop on the dinner table.

What you will need for your roasted carrots
Carrots: I used colorful carrots, but you can use the orange ones. I find the colorful carrots add such a beautiful look to your side dish.
Honey: Honey is the key in this dish so if you can find some local, all the better!
Step 1: ROASTED CARROT PREP
Wash and dry your carrots, peel if need be. Place your carrots in a roasting pan. Add your olive oil and salt, and toss. Make sure your carrots are evenly coated.
Drizzle your honey on top and add fresh thyme sprigs.
Step 2: PLACE IN YOUR OVEN
Preheat the oven to 350 degrees.
Place your carrots in the oven on a rack that is placed in the middle. Bake for 35-45 minutes or until the carrots are completely roasted. You can check if your carrots are done by inserting a fork into them. If it easily goes through your carrot they are done.

Bundle of carrots
1 tablespoon of olive oil
½ teaspoon of salt
1 tablespoon of honey
Fresh sprigs of thyme
