I really enjoyed making this olive oil cake, it was super easy and extremely flavorful. This cake came out moist and light. You are able to taste the olive oil and the citrus accents.
Extra Virgin Olive Oil – This cakes base is olive oil and I would recommend using a high quality olive oil, there should be plenty to pick from at your local grocers.
“00” Flour – This flour is commonly used in Italian cuisine. It has a very fine texture and results in a smoother and silkier batter. You can use all-purpose flour interchangeably and really makes no difference in taste or the final texture of this dish.
Step 1: THE BATTER
To make your batter for this recipe you will combined your dry ingredients; “00” flour, granulated sugar, baking soda, baking powder and kosher salt. Mix these ingredients well, once completed incorporate the extra virgin olive oil, milk, honey and eggs. Then you will add your orange zest and freshly squeezed orange juice. Mix together well, but be sure to not over mix.
Step 2: PREP YOUR SPRINGFORM PANS
You will be using a springform pan for this recipe, place parchment paper on the bottom and generously coat your pan with extra virgin olive oil. You want to coat the entire inside of the pan with the olive oil; the bottom and the sides as well. You will then pour your batter into the spring form pan.
Step 3: BAKE THE CAKE
Preheat the oven to 350 degrees
Bake for 50-70 minutes, timing may vary so keep a close eye.
To check if your cake is cooked completely through place a knife into the center and if there is batter on the knife it needs to be cooked a little longer.
Step 4: LET COOL AND GARNISH
Remove from the oven and place on a cooling rack for 1 hour
With a sifter, sift powdered sugar onto the top of your olive oil cake. I garnished with orange zest, rosemary sprigs and blackberries, absolutely delicious!

- 1 cup of whole milk
- 2 tablespoons of honey
- 2 tablespoons of orange zest
- 2 tablespoons of freshly squeezed orange juice
