This Slow Roasted Coffee Rub Ribeye is a showstopper. This is a decadent and flavorful dish that combines the richness of ribeye steak with the bold flavors of coffee and spices The result is a tender and juicy steak with a rich, smoky flavor that will delight your taste buds.
What you need
Ribeye: Head to your local butcher and grab a nice piece of ribeye steak. I would suggest about a half a pound per person. PRO TIP: Temper your ribeye!
Letting a piece of ribeye meat sit out before cooking, also known as tempering, has several benefits:
1. Even Cooking: Allowing the ribeye steak to come to room temperature ensures that it cooks more evenly. Cold meat takes longer to cook on the inside, which can result in an overcooked exterior.
2. Faster Cooking Time: A room temperature ribeye steak will cook more quickly than a cold one, reducing the overall cooking time.
3. Better Flavor: Bringing the ribeye to room temperature allows the natural flavors to develop and enhances the overall taste of the meat.
4. Juicier Results: Cooking a room temperature ribeye steak helps the meat retain its juices, resulting in a juicier and more flavorful final dish.
5. Improved Tenderness: Tempering the ribeye meat before cooking can help to make it more tender and easier to chew.

Fresh Tarragon: Using fresh Tarragon Sprigs adds dynamic flavor to this dish.
Fresh Ground Coffee: Using fresh coffee allows the most flavor. This is an essential part of this dish and would recommend using fresh coffee grounds and it is even better if you can ground your coffee beans right at home!
Step 1: CREATE YOUR COFFEE RUB
You want to take a medium size bowl and incorporate your fresh ground coffee, pepper, salt, garlic powder and brown sugar. Mix all dry ingredients well and set to the side. Take your tempered ribeye steak and pat dry with a paper towel. You will then take your dry rub and coat your steak, make sure to massage the rub into the steak so you can get the most amount of rub onto your meat. You can use gloves for this process if needed.
Step 2: SEAR YOUR RIBEYE
In a searing pan on high heat place 1/4 a stick of butter and half of the bunch of fresh tarragon. You will want the butter to come to the highest temp and begin searing your meat on all sides. It should take about 2-3 minutes to get a nice sear on each side. Once completed place to the side to rest.
Step 3: PREP YOUR PAN
Preheat oven to 300
Using tongs for this process, transfer your piece of meat from the searing pan to an oven safe pan. I used a pan with about a 2 inch lip to allow me to include all my ingredients.
Take your carrots and chop into half inch pieces. Then take your potatoes, chop if needed, I used fingerling potatoes for this dish. You will then take your onion and cut into half moon slices.
Take all your chopped vegetables and place around your seared ribeye. You will then add your beef broth, worcestershire sauce, remaining butter cubed and fresh tarragon.
Cover with tinfoil and place in the oven at 300 for 2 hours
Step 4: REMOVE FROM OVEN AND SET
Remove ribeye from oven and let rest for at least 30 minutes before slicing into. Letting a ribeye steak sit out after cooking is important to retain juiciness, ensure even cooking, tenderize the meat, develop flavors, and achieve the desired level of doneness.
