Peanut butter cookies have always been a favorite of mine and I never started making them up until a couple years ago. There is this market on the Cape that has the best peanut butter cookies! They are large, not too crispy and they just melt in your mouth. I have spent some time perfecting this recipe and even though these may not be AS good, they are pretty close. I may have to pop in and ask for their recipe!
Step 1: MAKE BATTER
In a large bowl add your “00” flour, baking soda, baking powder and kosher salt and mix well. In a separate bowl add the granulated sugar, brown sugar, unsalted butter (softened) and mix on medium speed, then add your peanut butter of choice. I chose to use natural peanut butter, if you do just make sure to stir well before incorporating into your mixture. The oil from the peanut butter tends to accumulate on the top of the jar.
Then add in one large egg and mix on medium speed. Now slowly add your flour mixture, 1/4th of a cup each time and mix. You will now add the maple syrup and mix well. At this time you may find it easier to mix with your hands.
Step 2: BAKE
Preheat oven to 350
Roll batter into 1 1/2 inch balls and place on a baking sheet with about 2 inch space between each ball. With a fork make a crossed pattern. Place in the oven for 12-14 minutes.

- 1/2 cup of unsalted butter (softened)
- 3/4 cup of peanut butter (natural optional)
- 1 large egg
- 1 tbsp real maple syrup
